Summer is here. It was 30C today and I celebrated a friends birthday with a nice picnic in a park. Summer also means lots of great fresh fruits and veggies...

#1 Maria's breakfast (this time with fresh watermelon)
#2 Quinoa salad with toasted sourdough, goats cheese and lemon
#3 A bag full of veggie goodies - ready to make a great minestrone
#4 Bananas have been very expensive for the last couple of months. After a cyclone destroyed big parts of the banana harvest. Now they are back and we enjoy them a lot
#5 Cheating on my breakfast (#1) and having the best soaked muesli w/ yoghurt & fresh fruits and rhubarb compote

We are having a long weekend here in Sydney and let me tell you it is wonderful to have lots of time to spend for things you wanted to do in a long time.
We also made it to the great farmers market in Prymont which takes place every first Saturday of the month.

#1 The weather is a bit funny here lately and can't decide if it should be sunny or windy
#2/3 We got great veggies and herbs for beautiful dinners
#4/5 Rested with a great coffee from Single Origin stall
#6 Took the ferry to Balmain
#7 I got a beautiful waratah which is a typically Australian flower.

I love rhubarb! Rhubarb juice, compote or any sorts of cakes, it is such a great vegetable and I can't get enough of it. On the weekend we walked over the markets and thought why not making some rhubarb compote for our breakfast for this week. And so I did. Just peeled the stalks, chopped them into small pieces, got the juice of one blood orange and 2 tea spoons of raw sugar and cooked it for 15 minutes.

Lemon cake

Lemon Cake


Many of you who come by this space every now and then may have noticed that if I start baking a cake I tend to most of the times make the wonderful lemon cake from the Rose Bakery breakfast/lunch/teak cookbook. I altered the recipe slightly over time and also like to add berries on top of the cake which makes it really nice and fruity. Many of you asked me to share the recipe....and here it is...

What you need:

250g soft, unsalted butter
200g caster sugar
4 organic eggs
juice of a lemon
grated zest of 2 lemons
1 rounded teaspoon baking powder
1/2 teaspoon of salt
50g ground almonds
280g plain flour (sifted)

200g frozen (or fresh) berries
2 tablespoons raw sugar

>> For the glaze
juice of 1/2 lemon
100g icing sugar

Preheat the oven to 180C

1) beat the butter and sugar until the mixture is very light and creamy
2) add the eggs, one at a time, beating well after each addition
3) add the lemon juice and zest
4) Mix together the baking powder, salt, ground almonds and carefully fold into the mixture with the flour
5) Butter your loaf tin and line its base with a parchment paper
6) Pour the mixture into the tin, take your frozen berries (you can take basically whatever berries you like, e.g. blue berries) press them gently into the dough and sprinkle the raw sugar over the berries.
7) Bake for about 45 minutes or until a knife inserted in the centre comes out clean and the top is light golden.
8) Remove from the oven and cool the cake in the tin before taking it out
9) After the cake cooled down, mix lemon juice with enough icing sugar to make a thick but pourable mixture. Let it drip down over the cake and if you have a bit of lemon zest left, use also for topping.

I always make this cake in a loaf tin but you can use any shape.

The other day a couple of you asked me about the breakfast in one of the pictures and I thought, I should write a little post about my favourite breakfast. I eat it since a year almost every day and can't get enough of it : )

Well, I used to be a muesli person for a long long time - and still love it, but as it wasn't always so great for my stomach I decided to try a couple of new things and one of them was the great budwig breakfast recipe. It is supposed to be very healthy for you and also tastes really good - quiet a good combination I think.

How to make it.
3 table spoons (150g) quark (sort of a cottage cheese), or yoghurt, add 1-2 table spoons flaxseed oil and stir it up really well (that is the important part) until you cannot see any more oil and the yoghurt looks quiet creamy. After that add two table spoons freshly ground flaxseed.

You can also add a spoon of honey to sweeten it or nuts and fruits if you want it a bit more exciting. A couple of months ago, I poached pears in freshly squeezed orange juice with prunes and a cinnamon stick. That was also very delicious.

Tips.
Keep the flaxseed oil dark in its container and in the fridge. Also grind the flaxseed every day fresh to avoid that it get rancid.

A Monday evening

Just a week and a bit until Christmas. We had the first snow today..how nice and surprising it was when I looked out the window and the flakes where dancing down from the sky..
And how nice it is to have a quiet evening at home.

A nice package from my boyfriends family reached us today with some gifts for Christmas and also some Panforte (for which we were secretly waiting for) made by his mum. It is so good with all the fruits and almonds in it. Ah we love it.
She also got me this cute tea pot. It has such a beautiful shape and pattern.
So we lit the candles and had the first slices of Panforte and some tea.

I like you Advent and I am glad the usual Christmas stress hasn't reached me yet. I hope it will pass me this year...

I had a fantastic weekend...actually I still have : )
Started with a nice quiet Friday and a little sleep in on Saturday....
We went to the farmers market to get stocked up with veggies and fruits to cook nice dinners next week, strolled over the flea market and had a nice coffee with friends and were listening to this amazing song quiet a lot...I baked a cake for a friends birthday party and started my Sunday with reading in bed....and right now I am happy about some nice hours of sun this afternoon : )

I loved you weekend. See you again in a couple of days....
